Hydrophobic Coating
Non-stick coating materials have two essential features: on one hand, they contain components that are highly hydrophobic and oleophobic, while on the other hand, they contain coupling molecules which are ready to pair and which bind chemically to the subsurface. If the liquid sol is applied to a surface the couplers seek out sites to bind to the substrate, while the hydrophobic groups strive for the liquid/air boundary. During the drying process all the components connect with each other and thereby form a mechanically and chemically stable, highly hydrophobic and oleophobic layer. Such layers reduce the adhesive forces between the coated surface and most solids and liquids. Water runs off, while dirt cannot adhere firmly and can therefore be easily removed. This is true of limestone on shower walls as well as for burnt rice in pans.
